6 medium potatoes
1 small onion
1 pound bacon
potato water
American or Velvetta© cheese
flour

Directions:
Directions:
1. Peel and cook potatoes with onion and salt. Drain, saving potato water. Set aside. Slightly mash.
2. Cut up bacon and brown. Drain, saving bacon grease.
3. Put 2 tablespoons of bacon grease in a large saucepan.
4. Add to grease, 2 tablespoons of flour. Stir and mix well over medium to medium/high heat.
5. Stir constantly until mixture is medium brown.
6. Slowly add potato water, stirring constantly, to desired consistency.
7. Be careful not to burn yourself on the steam.
8. Add potatoes and stir well. Add more water if too thick.
9. Serve with sliced cheese.

This little recipe was one of my Grandma's specialities. This recipe is plain and simple but huge on taste and always served with love.
