6 tbsps. white wine vinegar, 1 tsp. fish sauce, 1 tsp. finely grated ginger, 1 tsp. brown sugar, 1
serrano chile, 1 honeydew melon, 2 cups spring mix, cup red onion (sliced thin), cup mint
leaves, cup coarsely chopped salted dry roasted peanuts, flaky sea salt

Directions:

1. Whisk wine vinegar, fish sauce, ginger, brown sugar in a large bowl to combine. Thinly slice the
serrano chile, add to dressing, and let sit 10 minutes.

2. Half the melon, clean out seeds, cut off skin, make wedges, then cut in half.

3. In large bowl, transfer the dressing, Add the spring mix, onions, and honeydew melon. Gently
toss to coat. Arrange salad in a large shallow bowl or on a platter.

4. Top with mint leaves and peanuts. Sprinkle with sea salt.
