1 cup rice
3 Tablespoons olive oil or 3 Tbls. butter
1 chopped green pepper
1 medium chopped onion
1 sliced clove garlic
1 ˝ teaspoons salt
2 ˝ cups hot water
1 - 1 ˝ pounds shrimp
˝ pound shredded cheese
⅓ cup evaporated milk

Directions:
Directions:
Brown rice in olive oil or butter. Add onion and sauté. Then add green pepper and garlic. Brown together. Add salt and hot water. Put shrimp on top, cover and cook or 30 -40 minutes on low heat.

Combine cheese and evaporated milk in double boiler and melt together. Serve as sauce over shrimp and rice.
