3 c flour
1 tsp salt
1 tsp baking soda
tsp baking powder
1 tsp cinnamon
tsp lemon rind
1 c oil
2 c sugar
3 eggs
2 tsp vanilla
2 c shredded zucchini

Directions:
Directions:
In a medium bowl, mix together dry ingredients. In a larger bowl mix oil, sugar, eggs, vanilla. Add all dry ingredients. Mix well. Add 2 cups shredded zucchini and mix well. Pour into 2 greased loaf pans or line pan with wax or parchment paper.
Bake at 325 for about 1 hour. Bake until toothpick inserted comes out clean.
