5 to 7 tart apples
½ cup sugar
2 Tbsp. flour
⅛ tsp. salt
1 tsp. cinnamon
¼ tsp. nutmeg

1 recipe plain pastry
2 Tbsp. butter

Directions:
Directions:
Pare apples and slice thin; add sugar mixed with flour, salt and spices. Fill 9-inch pastry-lined pie pan. Dot with butter. Adjust top crust. Bake in hot oven (450º) for 10 minutes, then in moderate oven (350º) about 40 minutes. If apples aren't tart, add 1 Tbsp. lemon juice. Grated lemon peel may also be added, if desired.

Janice's note: If you sprinkle the bottom crust of a juicy fruit pie with a layer of sugar, then a thin layer of flour, your pie will have a crisp bottom crust.
