1 c dried apricots - chopped in a mixing bowl
1 orange -juice and rind grated
2 T. melted butter
1 tsp vanilla
1 egg - beaten well
c chopped nuts

Sift Together
2 c flour
1 tsp baking powder
tsp baking soda
tsp salt
1 c sugar

Directions:
Directions:
Grate orange and add orange rind to bowl with diced apricots. Pour juice from the orange in an 8 oz c and add boiling water to fill cup and pour over apricots and orange peel. Let sit for 20 minutes. Then add vanilla, butter and egg. Mix well. Add sifted dry ingredients and nuts. Mix well. Bake in wax paper or parchment paper lined 5 x 9" loaf pan about 1 hour at 350. Test with toothpick, if it comes out clean then bread is done.
