¾ c brown sugar ½ c buttermilk 1 egg 1 tsp vanilla 2 c flour ½ tsp baking soda 1 c bananas-mashed (about 2) ¾ c English walnuts, chopped, divided ½ tsp cinnamon
Mix together brown sugar, buttermilk, oil, egg, vanilla, flour, baking soda, banana, and ¼ c nuts. Spoon into well-greased muffin tins. Combine ½ c chopped nuts and cinnamon. Sprinkle over muffins. Bake for 20 minutes at 375º or until center springs when touched.
