⅔ to ¾ cup granulated sugar
2 Tbsp. flour or 1 ½ Tbsp. quick-cooking tapioca
½ tsp. grated lemon rind
1 to 2 tsp. lemon juice
¼ tsp. nutmeg
½ tsp. cinnamon
⅛ tsp. salt

4 cups fresh sliced peaches
1 Tbsp. butter or margarine

Directions:
Preheat oven to 425º. Line a 9-inch pie pan with bottom pastry crust; roll out top crust. Combine all ingredients but fruit and butter. Arrange half of peaches in lined pie pan; sprinkle with half of sugar mixture; repeat. Dot filling with butter; adjust top crust.

Bake at 425º for 10 minutes and then turn oven to 350º for 30 minutes.
