Ingredients: 2 ½ lb ground beef 4 minced garlic cloves 1 c onion, chopped 1 c bell pepper, chopped 1 (1.5 oz) can of whole tomatoes 2 (8 oz) can of tomato sauce 2 T Italian seasoning 1 large bay leaf 1 tsp basil 1 tsp oregano 1 tsp salt or to taste 1 tsp pepper or to taste

Directions:Brown ground beef in a skillet. Drain and rinse with water. Set aside. Saute garlic, onions, and bell peppers on medium heat until onion is clear (approx. 3 to 4 minutes). Drain juice from can of whole tomatoes and mash with a fork. Add to saute. Also add tomato sauce and meat and stir well. Add Italian seasoning, bay leaf, basil, and oregano. Stir well. Cook for 15 to 20 minutes. Add salt and pepper to taste. Cook for 1 hour on medium heat, stirring occasionally. |

Notes: So in the first cookbook, I wrote about how Capin's spaghetti was a favorite that I made for Thomas and me frequently before kids. He would ask, "Where did you learn to cook like that?" Now it is not only a favorite of Thomas and mine but of my girls. Capin's spaghetti is Caitlin's favorite meal. If I start getting lazy and make spaghetti from store-bought marinara sauce, they will be nice about it and say it was good but not like Capin's spaghetti!
Also, Leah made Capin's spaghetti in her cooking class that she and I did the first year she homeschooled. For Capin's 88th birthday Leah did a pop-up restaurant at Capin's house on February 17, 2018. The theme was "Around The World". She had many courses on her menu, and they were all from different countries. It was very interesting. However, for the main course, she served Capin's spaghetti. Everyone loved it as usual.
