Directions:1. In a small bowl, mix ⅔ cup warm water (110º) and the yeast. Let stand until dissolved, about 10 minutes. Using a stand mixer with dough hook attached, mix in it's bowl 4 cups flour, the butter, 2 eggs, sugar, salt, and the yeast on medium speed until a smooth ball of dough forms, 3-4 minutes. Transfer the dough to a greased bowl; turn until coated. Cover; let rise in warm area until doubled in size, about 1½ hours.
2. On a floured work surface, roll out the dough to a 14x18" rectangle. Top with the - FILLING- leaving a ½" border around the edges. Starting with 1 long end, roll the dough into a log. Cut into nine 2" thick rounds.
3. In a greased 9" round cake pan, arrange the buns, cut side up. Cover; let stand in a warm area until buns are puffed and fill the pan, about 25 minutes.
4. In a small bowl, whisk the remaining egg with 1 tbsp. water; brush on the buns. Bake at 350º until golden and cooked through, about 35 minutes, (tent buns with foil if they brown too quickly). Let cool in the pan for 10 minutes. Turn the buns out onto the platter. Add the - TOPPING - . |

Notes: this was shared with me from a delightful woman named BUNNI for Minn. To say the least the buns are as wonderful as the woman. Years have gone by, but every bite of these buns bring Bunni into full view. These and Bunni will always be a favorite.
