Meringue:
6 egg whites at room temperature
⅜ tsp each salt and cream of tartar
1 cup brown sugar
½ cup white sugar

Filling:
2 packages cream cheese
¼ cup milk
1 cup white sugar
2 cups semi-sweet chocolate chips
2 cups whipping cream

Ganache:
1 cup chocolate chips
Enough milk or cream to immerse the chips but not cover totally

Directions:
Directions:
Preheat oven to 275º
Meringue:
Beat egg whites with salt and cream of tartar until soft peaks form. Gradually add both sugars and beat until stiff and thick.
Outline three 10 inch circles on parchment paper. Spread the meringue equally on all three circles. Bake for 50 minutes or until dry. When cool, remove from parchment.

Filling:
Beat the cream cheese with the milk and sugar until well blended. Melt the chocolate chips and fold into the cream cheese mixture. Whip the cream until peaks form and fold into the cream cheese and chocolate mix. Spread the filling between the meringue layers, saving enough to frost the top and the sides and also to pipe a border edge around the top of the torte.

Ganache:
In a small pot, melt the chocolate chips and cream/milk over medium heat bringing to a boil and stir until creamy and shiny. Let cool and pour on top of the torte using the piped edge to keep from spilling over the sides. Can be served with Fresh seasonal fruit, but delicious all on its own.

Found this recipe written out twice in Gramma Louise Middleton's recipe box, so thought it must be a keeper, which it was. Is a very rich delicious dessert and Karl's birthday favourite.
