1 quart yellow squash
1 tsp. sugar
1 can (1/4 chopped) green peppers
1/2 cup chopped nuts, or slivered almonds
½ cup mayonnaise
½ cup grated cheese
2 eggs, beaten
1 cup herb seasoned stuffing mix
1 can cream of chicken soup
1 can cream of mushroom soup
½ stick butter
½ can (4 to 5 oz.) evaporated milk
Salt and pepper to taste

Directions:
Cook peppers in butter until tender. Cook squash until tender and drain the water. Add cheese and mix until melted. Set aside squash mixture. Mix sugar, eggs, mayonnaise, nuts, salt, pepper, stuffing mix, soup and stir together. Spray casserole dish and pour the mixture into dish, alternating with squash mixture and stuffing mix. Bake in oven for 35 to 40 minutes at 400 degrees until cheese and casserole bubbles. Sprinkle the top with extra cheese. Can be made the night before and stored in the refrigerator overnight
