4 thinly sliced tomatoes
¼ cup basil leaves
½ cup chopped green onion
1 (9 inch) pie shell
2 cups grated cheese
¾ cup mayo
1 tsp. salt/pepper
1 clove garlic – chopped


Directions:
Directions:
Preheat oven to 350 degrees. Bake pie shell for 10 minutes. Lay tomatoes in colander, sprinkle with salt. Allow to drain for 10 minutes. Pat dry with paper towels. Lay half tomato slices in bottom of pie shell. In a small bowl mix together green onions, basil, garlic, salt and pepper. Sprinkle half of mixture over pie crust. Layer second half of tomato slices, then the basil mixture. In a separate bowl, combine cheese and mayo. Spread on top of pie. Bake for 30 minutes.
