1 c chopped walnuts
1 lb chopped dates
1 c sugar
2 eggs, separated
1 1/3 c flour
1 tsp baking powder
2 tsp vanilla
1/4 tsp salt
1 medium can pineapple chunks
bananas
oranges, fresh or canned
cherries, fresh or canned
whipped cream or Cool Whip

Directions:

Mix sugar and egg yolks. Beat in walnuts, dates, flour, baking powder, vanilla and salt. Add beaten egg whites. Divide into 2 cake pans and bake at 350º for 30 minutes. Cool. Break up the cake into pieces. In a bowl with a distinct shape (mound shape) alternately add cake pieces and fruit, reserving the liquid of pineapple. Pour pineapple juice over and let stand for several hours. When ready to serve, place upside down on a serving dish and frost with whipped cream or Cool Whip. Decorate with fruit of your choice.
