Ingredients:  
Ingredients:  
1 pound Italian sausage (turkey is fine, actually my preference, sweet or hot)
2 stalks celery, chopped
3 medium zucchini, sliced
1 small onion, finely chopped
3 cups beef stock
8 oz tomato sauce
1 tablespoon chopped fresh basil
salt and pepper to taste
One package cheese tortellini (if desired for a heartier meal)
freshly grated parmesan cheese

Directions:
Directions:
Brown sausage and drain. In crockpot, place all ingredients (except parmesan and tortellini) and cook on low for about 6 hours. About 30 minutes before serving, turn crockpot to high and add tortellini. Serve with parmesan cheese.
