1 Whole Chicken
3 sliced Celery Stalks, leaves included
12-15 sliced baby carrots
1 chopped Medium Onion
Wyler Chicken Wyler Granules OR 1 T. Better than Bouillon (I use this)
Rana Fresh Tagatelle (cut noodles into thirds) OR No Yolks Noodles,broken into smaller pieces. These are in the fresh pasta section of most stores.

Method:
Place whole chicken in large pot, covered with water (I sometimes use 1/2 water and 1/2 Swanson Canned chicken broth for a richer flavor.
Bring to a boil, cover and reduce heat but keep at a light boil until meat is pulling away from the bone and chicken is cooked thoroughly.

Remove chicken to a platter and allow to cool so meat can be easily removed by hand and chopped into bite size pieces.

Strain broth into a clean soup pot. Add chicken and at this point, once in the clean pot, add seasonings . . .salt, pepper and Better than Bouillon (about 1 Tablespoon or to taste). Be careful not to over salt. Set on the stove over medium to low heat, depending on your stove. I cook with gas, so adjusting the heat is simple.

In the winter, we especially love good soups. One year recently, Jerry was hungry for homemade chicken noodle soup. I love a rich broth and came up with this recipe. I get the Better than Bouillon at our local Costco and usually buy 2-3 jars at a time as it adds depth to the soup and keeps well unopened in the pantry. We are never without Swanson's broth. I use it in almost every soup I make. Always starting with a fresh chicken, the Swanson's jump starts the broth and with a bit of the Better Than Bouillon, you get an easy rich broth . . .Do Not Be Afraid . . .soups are easy and the recipe looks harder than it is . . .its well worth the extra step of cooking the chicken!
