Crust:
2 tbsps butter, melted
1 package graham crackers
1 tbsp sugar
1 tsp cinnamon
Coconut flakes

Filling:
3 (8 ounce) packages cream cheese
1½ cups of sugar
3 eggs
1 pint sour cream
1 tsp lemon juice
1 tbsp vanilla




Mixed Berry Sauce.

Directions:
Directions:
Preheat oven to 350ºF.

Crust: Melt butter. Crush graham crackers in a Cuisinart. Add melted butter, sugar and cinnamon. Pulse until combined. Press Into a 10" spring form pan. Sprinkle crust with coconut flakes.

Filling: Mix cream cheese and sugar together. Add eggs one at a time. Add sour cream, lemon juice and vanilla. Beat until creamy. Pour over crust in spring form pan.

Bake for approximately 1 hour 15 minutes or until the top is light brown and when a knife is inserted into the center, it comes out clean.

Cool on a rack for at least two hours. Refrigerate.

Before serving, cover with Mixed Berry Sauce or canned cherries.

This is really good with cherry pie filling on the top. When Michael was young, his grandmother Edith served cheesecake to him without the cherries. He was very young and started crying because there were no cherries. Edith, being the consummate grandmother, wanted to rush out and buy some cherries. Michael learned to eat cheesecake with no cherries.
