½ C. butter, melted
1 C. onion, minced
1-11 oz. can whole corn or Mexican corn, drained
1-14 ¾ oz.can cream corn
3 eggs, beaten
2-4 oz. cans diced green chilies
1 C. sour ncream
1-8 ½ oz. box jiffy cornbread mix
1 C. cheddar cheese, shredded

Directions:
Directions:
Preheat oven to 350ºF.
Lightly butter a 2-quart casserole dish.
Saute the onions in the melted butter until tender.
Add the corns, eggs, green chilies and sour cream.
Stir in the muffin mix.
Pour into the dish.
Sprinkle cheese on top.
Bake uncovered 40 to 45 min.
