Beets
2 cups sugar
2 cups vinegar
2 cups water
1 lemon sliced thin
1 T cinnamon
1 t cloves
1 t allspice

Directions:
Directions:
Cook beets until tender, cold dip and slip skin. Make pickling syrup by cooking sugar, vinegar, water, lemon, cinnamon and allspice. Cover beets with mixture and simmer 15 minutes. Seal in clean, hot ball jars. Wax beans, stems of Swiss Chard and small carrots may be picked in the same way.
