Ingredients: 2¼ water 1 c milk 2½ potato flakes ½ c cornmeal 3 c flour 1 egg

Directions:Bring water to a boil. Add milk to boiling water and remove from heat. Stir in Instant potatoes. Mix just until moistened. Let set until fully absorbed. Mix well then let cool completely.
Put potatoes on lightly floured board. make a well. Add egg, cornmeal and sifted flour. Suggest adding about 2½ cups of flour to start and add more as needed to get a knead-able texture. Mix well (knead). When it's firm, roll into a foot long roll and cut into slices. Roll each slice into long snakes about ½ inch around. Cut into bite sized pieces then freeze on a cloth covered cookie sheet. When frozen, put in a freezer bag to use when you want.
Make sure to use a LOT of water when cooking gnocchi. |

Notes: This recipe came from Rick's Aunt Pearl. We all just called her Auntie. She showed me how to make this, pasta (she called them macs) and polenta. She was a typical Italian aunt... she was always trying to feed us.
