1 c. sugar
⅓ c. brown sugar
2 T. heaping flour
2 c. canned or fresh, cooked pumpkin
2 t. cinnamon
1 t. nutmeg
¼ t. cloves
¼ t. ginger
½ t. salt
3½ c. milk

Directions:
Directions:
Preheat oven to 425º. Beat egg yolks and egg whites separately. Mix together all ingredients except egg whites. Then fold in the egg whites. Pour into two pie shells. Sprinkle with nutmeg. Bake at 425º until crusts are browned, 10-15 minutes. Reduce heat to 350º. Bake until filling is firm, about 35 minuets.

Loretta recalls that her mother often used fresh pumpkin from the garden or butternut squash instead of pumpkin. Cut pumpkin in large pieces with shell on. Steam cook on low heat with a little water until soft. Scoop out of shell. To make it smooth put in blender with some of the milk. She often froze pumpkin or butternut squash to use in her pies.
