3 egg yolks
salt
1/2 cup sugar
1 9oz crushed pineapple
2 T lemon juice
3 egg whites
2 T sugar
1 cup heavy cream
2 cups vanilla wafers (1/2 box)

Directions:
Directions:
Beat egg yolks, salt, sugar and add pineapple and lemon juice. Cook in double boiler. Cook until mixture coats spoon. Stir constantly. Add pineapple and cool. Beat egg whites and sugar. Fold in shipped cream. Mix with custard after it has cooled. Grease pan and put crumbs in then custard, then more crumbs. Freeze 3 or 4 hours. Apricots can be used in place of pineapple. (I cook dried apricots to use)
