Slow-Roasted Pork Shoulder Recipe

Ingredients: 1 (6-8lb.) boneless pork shoulder 2 T. salt ¼ c. sugar ½ c. brown sugar

Directions:OVERNIGHT: Rub the pork all over with the salt and white granulated sugar. Cover and return to the refrigerator to brine overnight. Preheat oven to 300º F. Place the pork in a large baking dish and roast on the bottom rack, using a baster or large spoon to baste the pork every 30 minutes or so. (If you want to leave the pork in the oven and forget about it . It will still come out great without basting). The pork is done when it easily pulls apart with a fork, about 5 hours. Remove the pork from the oven and increase the oven temperature to 475º F. Rub the pork all over with the brown sugar and return to the oven. Roast for about 15 minutes, until the sugar forms a dark mahogany crust.
I have made this in the crockpot. After I shredded the pork I sprinkled the brown sugar over the meat and stirred it until well blended. Then let it warm through for about 15-20 more minutes in the crockpot. |
