3 lbs boneless pork cut into large pieces
1 quart chicken stock
1/2 cup dry white wine
3 cloves garlic minced
5 tablespoons olive oil
4 cups celery stalks and leaves chopped

Directions:
Directions:
Brown meat in hot oil. Add garlic and stock halfway up meat. Simmer for 2 hours, adding more stock if necessary.

Remove meat and when cool enough to handle, cut into bite size pieces, discarding any waste. Add meat back into broth. Add celery and continue simmering for 30 minutes, 15 minutes uncovered.

Serve with warm focaccia or a good crusty bread.
