2 1/2 cups shredded raw potatoes
1/2 cup all purpose flour
1 small onion, grated
1 egg
Salt and pepper to taste
Vegetable oil

Directions:
Directions:
In a small bowl, mix together raw potatoes, flour, onion, egg, salt and pepper.

In a large, heavy skillet, pour in enough oil to coat bottom. Heat oil over medium heat. Pour in scant 1/4 cupful of potato mixture, 3 or 4 at a time, and flatten into circles with the back of a spoon.

Fry for 3 minutes or until browned and crisp; turn and brown other side. Add additional oil as necessary. Drain on paper towels. If thinner pancakes are desired, add 1 to 2 tablespoons vegetable oil to batter.
