Ingredients:  
1 cup fine Cornmeal
Dash Salt
1 cup Buttermilk
1 Egg, beaten
1/2 cup Corn
1 cup All Purpose Flour
1 Tbs. Sugar
2 ts. Baking Powder
1/2 ts. Baking Soda
1 cup Cheddar Cheese, grated
2 Pickled Jalapenos
4 Tbs, Butter, melted

Directions:
Directions:
Heat oven to 375º
Grease stoneware
Sift Cornmeal, Flour, Sugar, Baking Powder, Baking Soda and Salt, set aside
In small bowl mix Egg and Buttermilk
Stir mixture into dry mix
Add Butter and stir gently
Add Corn, 2/3 cup Cheese and Jalapenos
Pour into pan and top with Cheese
Bake 20-25 minutes
Cool 5 minutes.
