1 cup shredded Squash - Any type
2 eggs
1/2 cup milk
1 1/2 cup flour (or more)
1 tsp baking powder
1 tsp salt
1 tsp oil

Directions:
Directions:
Beat eggs, stir in milk. Sift together flour, baking powder and salt. Stir in to egg mixture and oil. Add squash to batter and drop by spoonfuls into about 1/2 inch hot fat and fry until brown, turning once. Drain and serve with syrup or applesauce. Other option is to use a deep fat fryer at 375º. This batter works great on onions too. If doubling recipe use only 3 eggs but double all other ingredients.
