1 bag frozen corn (about 4 cups)
2 tbsp. lime juice
2 tbsp. olive oil
1/2 cup chopped walnuts
1 - 2 jalapenos, seeded and chopped fine
salt and pepper to taste
1/2 cup feta cheese crumbles (I add a little more because I love them)

Directions:
Directions:
Mix together frozen corn, olive oil and lime juice. Add in chopped jalapenos and walnuts. Season with salt and pepper to taste. Mix well and place in the fridge to let the flavors combine (a couple of hours is good) Before serving add in the feta cheese crumbles and toss. Itís meant to be served cold.
