For Salad:
16 oz. can plain black beans, rinsed and drained
16 oz. can yellow corn, rinsed and drained
1 red bell pepper, seeded and diced
1 green bell pepper, seeded and diced
3 ribs celery, diced
1 small jicama, peeled and diced
1 onion, chopped
1 bunch cilantro, chopped
12 cherry tomatoes, halved
For Dressing:
½ c. vegetable oil
½ c. olive oil
½ c. cider vinegar
½ c. fresh lime juice
1 tbsp. stoneground mustard
1 tbsp. honey
1½ tsp. ground cumin
¼ tsp. coarse salt
¼ tsp. dried oregano

For Salad:
In a large bowl, combine all salad ingredients. Chill several hours.

For Dressing:
In a blender on medium speed, mix all dressing ingredients. Chill. Toss salad with dressing to coat just before serving.
