6 c. water
½ c. butter
2 t.+ seasoned salt
½ t.+ Tabasco sauce
1 lb. Velveeta cheese, diced
1½ c. quick cooking grits
3 eggs, beaten
1 t. onion salt
½ t. garlic salt

Variation: add 1 can chopped green chilies
½-1 jalapeno

Directions:
Directions:
Boil water, add grits and cook for a few minutes. Add butter and eggs, then the seasonings and cheese. If you re using the green chilies, add them now, too. Stir until well blended and cheese has melted. Bake at 325º F. for 1 hour.
If you want spicier grits add more Tabasco , ½-1 seeded and chopped jalapeno, to taste
