4 large tomatoes
1 (8oz.) pkg. cream cheese
1/4 cup fresh parsley - minced
1 1/2 tsp fresh basil - minced
1 clove garlic - minced
1/4 tsp salt
1/4 cup flour
1 cup panko bread crumbs
1 egg
1 tbsp. milk
3 tbsp. utter
3 tbsp. olive oil

Slice the tomatoes into 4 thick slices, not too thick as they will be too hard to work with, place on paper towels to drain. Meanwhile, beat cream cheese, basil, parsley, garlic aned salt until smooth. Spread this on a tomato slice then top with another slice. In three shallow dishes, in this order, flour first then egg mixed with milk and last the panko bread crumbs.

Heat the butter and oil in a skillet.

Dip the tomato "sandwich" into the flour, then egg, then panko. Place in skillet and fry until golden brown. Drain on paper towel and serve immediately.

Personal Notes:
These were a big hit. Make sure your cream cheese mixture is nice a soft so it will spread easier. The herbs that are in the cream cheese can vary to your tastes.
