1 cup butter - softened
1/2 cup creamy peanut butter
3/4 cup brown sugar - packed
1/2 cup sugar - plus more for rolling
1 egg
1 tsp vanilla
1 pkg. Reeses mini peanut butter cups
2 cups flour
1 tsp baking soda


Drizzle
1 cup semi sweet bits
2 tbsp peanut butter
1 tsp butter

Directions:
In a large bowl, cream butter, peanut butter and sugars until light and fluffy. Beat in eggs and vanilla. Whisk together flour, soda, and salt. Gradually add to creamed mixture, mix well. Cover and refrigerate for 1 hour.

Preheat oven to 350º.
Take a spoonful of the cookie mix and flatten on palm of hand, place a peanut butter cup in the center and bring dough up and around it. Roll into a ball making sure it is sealed completely. Roll this in sugar then place on parchment lined cookie sheet. Place cookies 2" apart then bake for 12-15 minutes or until lightly browned. Cool 2 minutes then transfer to a wire rack.

Melt 2 tbsp. peanut butter with 1 cup semisweet bits and 1 tsp butter. Drizzle over baked cookies.
