2 cups sifted flour
1 tsp baking soda
¾ tsp salt
1 tbsp sugar
2 tsps baking powder
3 egg yolks, beaten
2 cups buttermilk
3 egg whites, stiffly beaten
1/3 cup warm bacon drippings, from approximately 8 strips of bacon

Preheat waffle iron.

Combine flour, baking soda, salt, sugar and baking powder. In a separate bowl, mix egg yolks with buttermilk. Gradually add egg yolk mixture to dry ingredients, beating constantly until smooth. Fold in stiffly beaten egg whites. Add warm bacon drippings. Mix until blended. Ladle batter onto waffle iron and bake until golden.
