1 pkg. shredded or cubed frozen hashbrowns
Large onion, diced (optional)
1 c. sour cream
¾ c. butter, melted
1 can cream of mushroom soup
2 c. shredded cheddar cheese

For Topping:
1 - 2 c. panko OR crushed Pepperidge Farms Stuffing Mix (depending on preference)

Directions:
Directions:
Preheat oven to 350º. Mix all ingredients (except topping) in a large bowl. Spoon mixture into a greased 9 x 13-inch casserole dish. Bake for 45 minutes covered. Add topping (see below) and bake for additional 15 minutes uncovered.

For Topping:
Mix panko or Pepperidge Farms Stuffing Mix with two tablespoons melted butter and sprinkle on top of casserole.
