⅓ CUP BROWN SUGAR
⅓ CUP SEA SALT (OR KOSHER SALT)
2 CUPS WATER
2 CUPS ICE
4 PORK CHOPS (BONE-IN, CENTER CUT, THICK)
LAWRY'S SEASONED PEPPER
PARSLEY
BARBECUE SAUCE

Directions:
Directions:
1. Mix brown sugar, water, and salt in a pot. Bring to a boil, then stop heat. Allow sugar and salt to dissolve. Once dissolved, add ice and let melt.

2. Soak pork chops (bone-side up) in brine for 2 to 5 hours in refrigerator.

3. When ready to cook, rinse pork chops with cold water and pat dry. Season with Lawry's and parsley to liking.

4. Start grill at highest setting. When at max temp, reduce to 500 degrees. Place pork chops on direct heat. When they start to get grey on top (about 8 minutes), flip. Baste with barbecue sauce of your choice, close grill and continue to cook at 500 degrees for another 8 minutes.

5. Reduce heat to 250 degrees. Flip again, and re-baste with barbecue sauce. Cook for 3 minutes. Flip, re-baste, and cook for 3 more minutes.

6. Remove from heat, let rest at room temperature for 5 minutes.
