1 lemon, grated rind and juice
cup boiling water
2 tbsp. cornstarch
cup sugar
pinch salt
2 tbsp. butter

Directions:
Directions:
Add lemon rind to boiling water, reduce heat and simmer for 5 minutes. In a small bowl, mix cornstarch, sugar and salt. Add water gradually stirring constantly. Return to saucepan and cook over medium heat for 10 minutes, until thickened. Lower heat and cook 5 minutes longer. Remove from heat, stir in lemon juice and butter. Serve warm.
