15 oz can of black beans (rinsed and drained)
9 oz cooked corn
medium tomato chopped
⅓ c. red onion chopped
1 scallion chopped
2 Tbps. fresh cilantro minced
Salt & Pepper to taste
juice of 1 to 2 limes (2 Tbps in a lime / 4 in a large lime)
1 Tbps. olive oil

Toss, stir and chill for 30 minutes. Add 1 chopped avocado just before serving.
