3 TBS olive oil
3 cups peeled & sliced small zucchini
cup chopped onion
1 tsp basil
1 tsp oregano
1 tsp salt (or to taste)
1 whole tomato chopped small
cup pizza sauce, spaghetti or marinara sauce
cup grated parmesan cheese
1 cup shredded mozzarella cheese

Sautee zucchini & onion in olive oil in skillet. When crisply tender add seasonings, tomato and sauce. Stir until tomato is soft and all ingredients are blended. Add cheeses over top of zucchini and cover skillet turn off burner and serve when cheese is melted.
