Mother's Potato Salad

6 Medium Potatoes (I use golden)
1 Large Onion
3 Stalks Celery
3 T Sweet Pickle Relish
6 Egg Yolks
1 T Sugar
Hellman's Mayo to taste, approximately 2 cups

Directions:
Directions:
Boil potatoes until tender. Set aside until cool, then peel and cut into small pieces. Dice onion and celery fine and add to potatoes. Bring eggs to boil and then remove from heat, cover and time for 18 minutes. Pour off hot water and put ice in pan and cover until eggs are cool. Peel eggs and mix yolks with mayo, sugar. Add pickle relish and stir all together. Add mayo to desired taste and texture. Let set for hour or two to allow all flavors to incorporate into potatoes. Salt and pepper can be sprinkled on individual servings.
