4 eggs beaten( I use 3 for the 2 of us if they are large eggs)
1/2 lb. shrimp chopped
1/2 cup onion chopped
1/2 cup mushrooms chopped
1 cup bean sprouts
2 tbsp. soy sauce
1 tsp corn starch

Gravy:
1 cup beef broth
1 tbsp. cornstarch
1tbsp soy sauce
1/2 tsp sesame oil
1 tsp sugar

Directions:
Directions:
In large skillet saute onions, mushrooms and bean sprouts in vegetable oil. Add shrimp. Stir in cornstarch and soy sauce. add mixture to bowl with 4 beaten eggs. Stir gently. The ratio should equal more veggies than egg and should not be too runny.
In clean skillet add vegetable oil to cover bottom of pan. Add 1/4 of egg mixture to pan formed in a pancake shape. Fry until bottom is firm enough to flip

Gravy: Place all ingredients in saucepan on med high heat; mix well and allow to boil until it thickens.
