1 graham cracker crust
3 C. diced Rhubarb
¾ C. Sugar
1 (3 oz. ) pkg strawberry jello
1/4 tsp. strawberry flavoring
1 (3 oz. ) instant vanilla pudding
1 ½ C. milk
¼ tsp. vanilla
1 (8 oz.) carton whipped topping

Directions:

Combine rhubarb and sugar. Let stand 1 hour. Put over heat and cook until tender about 10 minutes.
Then add strawberry jello and flavoring. Cool this.
Prepare instant pudding using milk and vanilla; beat until thick.
Fold in whipped topping and then fold in your cooled rhubarb mixture.
Pour into graham cracker crust and let stand overnight in 7 X 11 pan.

There was another recipe from Florence Beseke that is the same. She called it "Swirl Dessert"
