1 8oz reduced fat cream cheese at room temperature

½ c. low fat sour cream

2 Tbls fresh lemon juice

1 6.5 oz jar of pimentos finely chopped

6 oz sharp cheddar cheese

6 oz Pepper Jack cheese

2 scallions thinly sliced

Pita chips, celery sticks, potato chips, or scoops for dipping

Directions:

Heat oven to 425º

In a large bowl, whisk together cream cheese, sour cream, lemon juice and a pinch of salt & pepper.

Fold in the pimentos, cheddar and jack cheese, and scallions.

Transfer the mixture into a shallow 2 cup baking dish and bake until bubbling and light golden brown
15 -18 minutes.

Serve with chips or celery.
