4 Yukon Potatoes (halves)

2 TBS. OLIVE OIL

1 TSP. GARLIC POWDER

1 TSP. THYME

1 TSP. ROSEMARY

˝ TSP BLACK PEPPER

1 TSP. SALT

12 STRIPS BACON

PARMESAN CHEESE ( garnish )

Directions:
Preheat oven to 400. Use mandolin, slice thin potato slices. Add olive oil, garlic powder and salt. Toss potatoes until all are coated. Lay out 2 pieces of bacon, overlapping a straight row. Lay potatoes over lapping each other on bacon. Start at one end gently roll up bacon and potatoes, creating a rose, repeat. Place the rolled potato rose in a greased muffin tin.  Bake for 20 minutes. Cover roses with foil, bake additional 30 minutes. Top the roses parmesan and bake 5 minutes uncovered, serve.
