½ # butter
2 cups thinly sliced onion
2 cups sliced celery
1 # sliced toasted bread thoroughly dried in oven at 400º turning once
1 T dried sage
1 T salt
¼ t pepper
½ cup minced fresh parsley
3 eggs
turkey liver and heart chopped fine

Directions:
Directions:
Melt butter, add heart and liver. Cook 5 minutes. Add onion and celery. Cover and steam about 15 minutes or until vegetables are tender. Cover toast with cold water. Then press out all water until fluffy. Pour butter mixture over bread. Season with salt, pepper, sage, and parsley. Add eggs and mix lightly. Bake
If stuffing turkey, pour boiling water into cavity of bird before stuffing. Drain and stuff lightly. Use skewers and twine or thread to hold together.
