1 lb. cooked ham, chopped
3/4 C. green onions, sliced
3/4 C. green bell peppers, chopped
3 C. cheddar cheese, grated and divided
10 flour tortillas
5 eggs, beaten
2 C. half-and-half
1 T. flour
1/4 tsp. garlic powder
Red pepper sauce, to taste
Preheat oven to 350º F. when ready to bake.
Grease a 9x13-inch baking dish when ready to bake.
In a food processor, add the ham and pulse until finely ground.
Mix the next 2 ingredients with ham.
Spoon the ham mixture and 3 tablespoons cheese onto each tortilla.
Roll and place tortillas, seam side down, in baking dish.
In a bowl, mix eggs, cream, milk, flour, garlic, and hot sauce.
Poor this mixture over the tortillas.
Cover and refrigerate overnight.
Bake, uncovered, for 50 to 60 minutes.
Sprinkle the casserole with the remaining 1 cup cheese.
Bake 3 minutes, or until cheese melts.
Let stand at least 10 minutes before serving.
