Ingredients:  
1 C uncooked rice
1 Can (8 oz) pineapple chunks in juice, drained, with juice reserved
1/2 C water
2 T white vinegar
2 T soy sauce
2 T cornstarch
1 T brown sugar
1/2 t ground ginger
1/2 t salt
2 T oil
1 lb. boneless chicken breasts, cut into 1" chunks
1 head broccoli, cut into florets
2 gloves, garlic, minced
1 t sesame oil

Directions:
Directions:
Cook rice according to pkg. directions.
Meanwhile combine pineapple juice, 1/2 C water, vinegar, soy sauce, cornstarch, brown sugar, ginger and salt,
Set aside.
In skillet heat oil over medium-high heat.
Add chicken, broccoli and garlic.
Cook and stir until chicken is no longer pink, 8-10 minutes.
Stir cornstarch mixture and add to chicken mixture along with pineapple.
Bring to a simmer, cook, stirring until thickened, 1-2 minutes.
Stir in sesame oil.
Serve over rice.
