4 5-oz. cans chunk light tuna in water, drained
1 4-oz. sleeve saltines (about 40 crackers), crushed
2 large eggs, lightly beaten
½ small onion, finely chopped
1 rib celery, finely chopped
2 cloves garlic, minced
2 tablespoons olive oil
½ teaspoon pepper

Directions:

1. Place a plate in oven; preheat to 200°F.
2. In a large bowl, combine all ingredients except oil. Mix well. Form mixture into 12 1/2-inch-thick patties. Put patties on a second plate.
3. Warm 1 Tbsp. oil in a large skillet over medium-high heat. Working in batches, place patties in skillet in a single layer.
4. Cook until golden brown on both sides, about 6 minutes total, flipping once or twice.
5. Transfer cooked patties to plate in oven.
6. Wipe out skillet and repeat with remaining oil and patties.
7. Serve warm alongside a salad or with salsa.
