1 cup sugar
3 tablespoons corn starch
4 cups pitted Bing cherries, divided
1 cup water, divided
3 ounces cream cheese, optional
9-inch baked pie shell

Directions:
Directions:
Mix the sugar and corn starch together; set aside. Simmer about 1 cup of cherries with ¾ cup water. Add the sugar mixture and additional ¼ cup water to the boiling cherry and water mixture. Boil 1 minute longer. If desired, spread the cream cheese on to the bottom of the baked pie crust. Put the remaining 3 cups of uncooked, pitted cherries into the pie shell. Cover with the cooked mixture. Refrigerate until firm.
