10 lbs pork shoulder ground (3/4 lean meat and 1/4 fat)
1 1/2 loaf white bread
4 cups milk
6 eggs
1/4 cup salt
2 tbsp black pepper
3 tbsp nutmeg

Directions:
Directions:
Soak bread in milk until soft. Mix all ingredients in a large pot. Fill casings with meat mixture. Do not overfill casings. Prick each sausage several times to prevent casings from breaking. Cook in boiling water for 10-15 minutes. Cool, package in plastic bags and freeze.
