5-6 potatoes (see note below)
1 egg
1 Tbsp. sugar
Dash of salt
Dash pepper
Dash of onion powder
Shortening for frying

Directions:
Directions:
Peel potatoes and grate in a large bowl. Squeeze out the liquid and discard. Add the remaining ingredients and mix together until well blended. Heat shortening in a frying pan with medium heat. Drop the potato mixture by heaping spoonfuls into the frying pan. Fry until crispy and golden brown. Drain cooked pancakes on paper towels before serving. Serve with sour cream or applesauce.
